Guacamole

Sauce Ingredients: 

2 ripe Colombian avocados 1 medium red tomato, diced 1/2 small red onion, finely chopped 1 jalapeño, seeded and finely chopped (optional, adjust to taste) 1 garlic clove, finely chopped Juice of 1 lime 2 tablespoons fresh cilantro, finely chopped Salt and pepper to taste 1 tablespoon extra virgin olive oil (optional) 1 arepa, cut into pieces (optional for a more Colombian touch) 


Instructions: 


Prepare the Avocado: Cut the avocados in half, remove the pit, and scoop out the flesh with a spoon. Place the flesh in a large bowl. 

Use a fork to mash the avocados until you get a creamy texture, leaving some small chunks for added texture. 


Mix the Ingredients:
Add the diced tomato, chopped onion, jalapeño, garlic, and cilantro to the bowl. Squeeze the lime juice over the mixture to prevent the avocado from oxidizing and darkening.


Add salt and pepper to taste. If desired, add a tablespoon of olive oil for extra smoothness and flavor.

Incorporate the Colombian Touch: Mix all the ingredients well until fully combined.


Serve the guacamole with arepa pieces instead of the typical tortilla chips to give it a Colombian twist. 


Presentation:

Place the guacamole in a nice bowl and garnish with a few cilantro leaves on top. Serve immediately to enjoy it fresh and full of flavor. 


Tips: You can adjust the amount of jalapeño or omit it if you prefer a milder guacamole. For an additional touch, add some toasted corn kernels or slices of fried ripe plantain, which will give it an authentic and delicious flavor.
